Twilight is hands holding an apple - Adam and Eve (Edward and Bella) ?
New Moon is a red and white flower - i don't know the reasoning for the cover picture but i know that it is called New Moon because a new moon is the darkest phase of the lunar cycle like Edward leaving is the darkest part of Bella's life.
Eclipse is a red ribbon that is ripped - ?
Breaking Dawn is chess pieces - ?

I dunno remeber anout New Moon's cover.
The ripped ribbon is to represent that Bella connot totally depart from her human life.
The chess peices: the red pawn in the back is representing Bella as a weak human and the white queen for her overcoming.
